Oven roasted broccoli

I started my venture into blogging somewhere in April this year. I decided not to procrastinate any further and just quite literally started out. Hadn’t planned anything, didn’t have a specific format in mind. I knew I was going to mainly focus of food blogging, that’s all. Oven roasted broccoli was one of the first few recipes that went in. I was a ZERO in photography. Didn’t know anything about lighting and above all, I used my samsung S7 phone for the photos (I now use D’s DSLR) :). Now that I look back, it feels very lame when I look at these pictures of my initial blogging days. I don’t regret one bit though because all I had to do was take the plunge. After that, things seem to be aligning pretty well. I have learnt better photography techniques, better ways to present food as such(there is a long way to go yes, but I have also come a long way :)). I have to thank my friend Lakshmi who gave me (and still gives me) a lot of inputs and ideas. I am also on instagram now where I see beautiful food every single day – simple stuff presented so well :). Anywho, there are some recipes I am redoing (today is this recipe’s turn) and I just want to post a pic of my roasted broccoli (then and now :)). Kinda feels like posting a weight loss pic before and after though I wish one day soon I can do that as well!!

On a serious note, I love broccoli (I love most vegetables) and this is a dish that’s a winner in my family. Not everyone in my house relish all the vegetables all the ways I like (too many Alls but that’s the truth). This dish is a keeper and a clear winner since all of us love it. I have also come to realise that I have my very own resident model, publicist & tester aka Adyant, my bratty toddler. For a toddler, he already has a refined palette. Enjoys almost all vegetables (just like his Amma and thatha:)). Is always eager to try out what I make especially when I am clicking pictures. Usually, I try and shoo him off since he ends up messing the whole place up. However, yesterday when I was clicking these pics and he came behind me and started digging into the food, I let him do so. I thought the beauty of those pictures is way beyond the beauty of the well constructed, well laid out plate (well, bowl in this case). So, below are a few pics I took while I was technically trying to click an ‘After’ pic for my blog.

Servings: 2 persons
Ingredients
  • 1 head broccoli
  • 2 tbsp olive oil
  • 3/4 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp red chilli flakes crushed
  • 1 pod garlic grated
Instructions
  1. Wash the broccoli clean and cut the broccoli into bite size pieces.
  2. Take a bowl and mix all the ingredients mentioned above.
  3. Spread the broccoli mix on a baking tray lined with a baking sheet.

  4. Bake for 20-25 mins in a preheated oven at 180c tossing the mixture every now and then in between till the broccoli is all browned.

  5. Serve the crunchy roasted broccoli immediately. 

Recipe Notes

1. I use a Siemens oven with stove top which comes with a grill mode (the flame is from the top for this mode). I used this mode and kept the broccoli 3 racks down for the first 10 minutes and the 2nd rack last 10 minutes. I find in this mode, I get the nice crunchy taste much better than the other mode. 

2. You can squeeze in a lemon extract into this mixture (reduce the oil by a half tbsp).
