Baby corn stir fry in a ginger garlic sauce (indo chinese)

So my son had some dinosaur day at school where the kids had to dress up as a dinosaur in some manner. I am usually prepared for these ahead of time but I had totally forgotten about this. So when I got a reminder for the next day, I was completely lost as to what to do. Saw some DIY stuff & realised I can make something simple with a jacket & some foam/ felt and some sticking/ stitching that was involved, thought will take help from mil or mom. One of the main reasons I am not really fancying these things is because Adyant simply doesn’t like to wear any of these ‘other than ordinary’ clothes aka ‘other than his big chattai jeans pants’. However, I did not definitely want to stand out as a parent who’d not put in any effort at all into this & so I went home (bought some foam roll on the way home) & immediately set to work. Fished out an old green jacket & stuck some triangle foam pieces using a double tape on the backside of the jacket (a DIY dino hoodie). Was so pleased with myself & the way it turned out. It was my first DIY of any sorts & I did not take help from anyone. Adya seemed to appreciate it & said he’ll wear it to school the next day. Of course, the next day when mom & D tried to get him to wear it, he refused it outright. D took the jacket to school & gave it to his teacher. We all thought maybe the whole school env could do the trick & his teacher could convince him to wear it. But no we were all absolutely wrong. The little bugger refused the wear the jacket. Thankfully he wore some accessories they had at school. The teacher was literally laughing when she told me how clear he is about his choices & that she finds it very cute. Well it’s definitely cute yes, but it’s also very annoying at times :D. So well, moral of the story was for me not to get too excited about any of these things with Adya since he’s more or less definitely going to give me one big bun :D. On the bright side, Adya is definitely clear on his choices & doesn’t waver on his choices. If he continues to remain that way, it could very well be helpful for him & us in the future for some big decisions :D.

Anywho, this gravy was something I put together in a sort of rushed manner. I originally bought the baby corn to try out a dish my friend had post a few weeks back. But I was pressed for time & thought of doing a stir fry with a nice ginger garlic sauce. It turned out sooooooooooooo well. I am so pleased with myself for this recipe honestly :D. It takes very less time & it tastes amazing. Try it out if you have a taste for indo chinese.

Baby corn stir fry in a ginger garlic sauce (Indo chinese)

Ingredients
  • 6 pods big garlic
  • 3 nos green chillies
  • 1 tbsp chopped ginger
  • 1 big onion
  • 1 big capsicum
  • 10-12 nos baby corn
  • 1 tsp soy sauce
  • 2 tsp maple syrup
  • 1.5 tsp corn flour
  • a handful fresh coriander leaves
  • 1/2 cup spring onion chopped
Instructions
  1. Veggie preparation - Chop the onions, baby corn & capsicum into thin & long pieces. Set it aside. Chop the garlic & ginger into thin fine pieces & ginger into thin & fine pieces. 

  2. In a wok/ kadai, heat some sesame oil. Once heated, throw in the garlic ginger & green chilli. Saute on high heat till the garlic starts to brown & the raw smell starts to wean off. 

  3. Throw in the onion now & saute on high heat till it starts to soften & brown. 

  4. Throw in the capsicum & saute on high heat for 3-4 minutes. Add some salt at this stage. 

  5. Add the baby corn & saute for a few minutes on high heat till the baby corn starts to brown. Add some salt again at this stage. 

  6. In a small vessel, mix corn flour with 2 tbsp of water to form a slurry. 

  7. Add the slurry to the veggie mixture, add some maple syrup & soy sauce as well. 

  8. Add a cup of water; Check & adjust for salt. Allow the mixture to boil.

  9. After a few minutes, once the gravy comes to your desired consistency, add freshly chopped coriander leaves & spring onion. 

  10. Mix well & turn off the heat. 

  11. Serve this gravy alongside some fresh rice or some simple fried rice. Yummmm!

Recipe Notes
  1. If you think coriander leaves & spring onion can't be added in the same dish, you'll be in for a surprise. I loved how the 2 flavours came out in this dish. For me both those ingredients were the real highlights of the dish. 
  2. I like to turn off the heat when the gravy looks a bit watery as the gravy tends to thicken once the heat is turned off (the work of corn flour). 
  3. You can swap the baby corn with paneer or any other protein. You can also add paneer or any other veggie along with this as well. 
  4. Be generous on the amount of garlic & ginger used. 

Stepwise pictures

Chop the garlic & green chilli thin & long. Chop the ginger into fine pieces. Chop the onion, capsicum & baby corn into thin long pieces. Heat a kadai/ wok with some sesame oil. Once heated, throw in the garlic, ginger & green chillies.

Saute till the raw smell weans off & the garlic starts to brown.

Throw in the onion & saute on high heat for 3-4 minutes.

Saute on high heat till the onions start to soften & start to turn brown.

Throw in the capsicum & saute on high heat for another 3-4 minutes. Add some salt at this stage.

Throw in the baby corn at this stage & some salt.

Saute for 3-4 minutes on high heat. You will notice the baby corn starting to brown.

In a small vessel, mix together corn flour & 2 tbsp water to form a slurry. Add the slurry, soy sauce & maple syrup this mixture. Also add 1 cup of water.

Let the mixture boil for a few minutes (a max of 5 minutes). You can check & adjust the salt & other seasonings at this stage as per your taste.

Once the gravy has thickened to your desired consistency, add freshly chopped coriander leaves & mix.

Finally add the chopped spring onion leaves & turn off the heat.

Serve warm along side some plain rice or some simple fried rice.
