Spaghetti aglio e olio

This week has been a very productive week for me with respect to blogging :). I have been able to document some of my favourites. If you are someone who’s reading my blog quite often, you will probably see me categorise something as a ‘favourite’ quite too often. What can I say?! Food defies logical meaning a lot of times for me :). This simple spaghetti soaked up in the olive oil & garlicky goodness is no exception. I absolutely absolutely love this one. Spaghetti aglio e olio literally means spaghetti with garlic and oil. You basically cook the pasta in hot water. As the pasta is getting done, you saute loads of garlic in olive oil which is kept on the lowest heat possible. It should take a good 5-8 minutes for the garlic to start browning which ensures the garlic flavour soaks up really well in the oil. After that just toss in the cooked pasta, add some salt, red chilli flakes, dried oregano & fresh parsley. Finish this off with a doze of parm on top. I am not exaggerating when I tell you how divine this dish tastes! There is only problem with this dish though – as you can see, this dish is just carbs and nothing else. So, I basically have this with a nice salad on the side – I made this for lunch today and I had this with a healthy version of health Corn Au Gratin (recipe coming up soon for this as well) – YUMMMM I tell ya! Ingredients
  • 500 gms uncooked spaghetti I used durum wheat
  • 1/3 cup olive oil
  • 1/2 cup thinly sliced garlic
  • 1.5 tsp dried oregano/ italian seasoning
  • 1/4 cup parmesan cheese
  • 1/2 cup chopped parsley leaves
Instructions
  1. Cook the spaghetti pasta as per package instructions. 

  2. While the pasta is getting done, pour olive oil in a broad pan and turn on the stove top. 

  3. Throw in the diced garlic without waiting for the oil to get heated. 

  4. Saute the garlic in oil in the lowest heat possible for 5-8 minutes. 

  5. Around this time, you will notice the garlic starting to brown. Throw in the cooked pasta (which typically takes about 6-9 minutes depending on the brand/ kind).

  6. Along with the pasta, throw in the seasonings - dried oregano, red chilli flakes, some salt & pepper. Give the whole mixture a good toss. 

  7. Finally, throw in the chopped parsley & parmesan cheese. Mix well and turn off the heat. 

  8. Serve hot with a sprinkle of extra parm and extra red chilli flakes :). Enjoy!

Pour olive oil on to a broad pan and light the stove top. Toss in the garlic even before the oil is heated.

Saute the garlic for a good 5-8 minutes in the lowest heat possible.

When the garlic starts to brown (just starts to, shouldn’t actually completely brown), toss in the cooked pasta, dried oregano, red chilli flakes and a bit of salt & fresh pepper. Toss well.

After 2 minutes of tossing the spaghetti in oil, throw in the chopped fresh parsley leaves & parmesan cheese. Mix well. Turn off the heat.

Serve hot with some extra parm & red chilli flakes added for an oomph and a zing :). If you are health conscious like me, have this along with some nice salad on the side.
