Triple chocolate doughnuts (Baked)

Hello peeps and Hello Priyanka :). I know I haven’t been consistent with blogging because a) too many things happening and b) when I am free I am just binge watching Netflix :D. When my sil Priyanka was here for new year 2021, this is literally how we rang in New Years. All of us were home from early evening. The kids happily cycled and were playing. I wanted to make a dessert and had book marked my friend Acquiline’s triple baked chocolate doughnuts. Priyanka and I were just chatting in the kitchen while I was putting this together and it was actually pretty easy to put together. I did not do the piping part neatly. I created a mess by not sealing the ziploc and let it flow out :D. but hey, all of us know of pretty messes and this surely was one :).

My sil was so impressed at how awesome it turned out and how easy it was to actually make these. She has been patiently waiting for me to upload the recipe ever since. I have been thinking to squeeze sometime and bake it with stepwise pictures but clearly that doesn’t seem to be happening :). I am travelling to India to meet my family in a few days and I thought if I upload the recipe now, we can surely make it once out there. Who knows maybe the stepwise pictures will happen while I am there :D.

Happy mother’s day to all beautiful mothers out there! My baby made a cute card for me and put it in a gift bag and gave it to me as a surprise. I took the card from his school bag and upon enquiring about it and exclaiming how cute it was, he took the card from me, asked me for a gift bag, placed the card in the gift bag and gave me my ‘surprise’ :). I love this boy to bits and even more so when he does funny stuff like this :).

Triple chocolate doughnuts (Baked)

Ingredients
Dry ingredients
  • 2/3 cups all purpose flour – 1.5 tbsp
  • 1.5 tbsp corn flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 tsp baking powder
  • 1/3 cup refined white sugar
  • 1/4 tsp salt
Wet ingredients
  • 1 no flax egg 1 tbsp flax egg + 2.5 tbsp water set aside for 10 minutes to set
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 1/2 tsp vanilla essence
Chocolate glaze
  • 1/4 cup semi sweet chocolate chips
  • 1/2 tsp milk
  • 1/4 tsp vanilla essence
  • a pinch salt
Instructions
  1. In a medium size bowl, add 2/3c (-1.5 tbsp) all purpose flour, 1.5T corn flour, 1/3c unsweetened cocoa powder, 3/4t baking powder, 1/3c refined white sugar, 1/4t salt.

  2. Mix everything together with a fork.

  3. In another medium size bowl, whisk together 1 flax egg, 1/3c milk, 1/3c vegetable oil, 1/2t vanilla essence.

  4. Add the dry mix into the wet and fold gently.

  5. Pour the batter into a piping bag/ ziploc bag. If using a ziploc bag, snip a corner using scissors.

  6. Grease the doughnut pan.

  7. Pipe the batter into the doughnut pan filling all 12 moulds equally.

  8. Bake in a preheated oven of 200c for 8-10 minutes (use the toothpick method to check if the doughnuts are baked).

  9. Take the doughnut pan out of the oven and let it cool for 5-10 minutes.

  10. Turn the pan and gently tap the pan to unmould.

Chocolate glaze
  1. While the doughnuts are cooling down, double boil 1/2c semi sweet chocolate chips in a wide bowl mixed in 1/2t milk

  2. Once fully melted, add 1/4t vanilla essence and a pinch salt.

  3. Mix well.

  4. Dunk the top side of the doughnuts into the melted chocolate.

  5. Garnish with sprinkles for an extra decoration.

  6. Set it aside and ofcourse, the doughnuts are ready to be devoured.

Recipe Notes
  1. You can use 1 regular egg instead of flax egg.
  2. If you do not have corn flour, you can use rice flour to make the cake flour (googled by my sil who tried this recipe and did not have corn flour on hand). 
  3. Each oven works differently. So keep an eye on the doughnuts the last few minutes to make sure they don’t over bake or burn.
  4. Let the doughnuts cool down completely before dunking them in the chocolate glaze.
  5. The glaze will harden over time and be perfect in just a few minutes of dunking. 
  6. If you have regular size doughnut pan, this recipe makes 6. 
  7. My sil needed more milk for the chocolate glaze.
