Hello peeps.. I am sure all of you have read Goldilocks and the 3 bears story as a child. I have always been a foodie even as a child and I increasingly realise this when I revive a childhood memory through some food made/ eaten/ seen in my present :). So that’s what happened to me when I made this for the first time a few weeks back. I was taken back to the porridge that Goldilocks eats out of the baby bear’s bowl after tasting the dad and mom bear’s bowl and setting it aside since one was too hot and one was too cold 🙂 (wonder how that happens considering the porridge was made at the same time and divided into 3 bowls :)). Anywho, I was always fascinated with the way the porridge was described and devoured by Goldilocks and wanted to have ‘that’ porridge. Ofcourse, porridge is only a fancy word for our kanji and I hated our kanji. I also hated oats when I tried it out while in school. I had a lot of oats when I used to live in Bangalore but that was not because I liked it but because it was just super easy to make. I still do not eat much of oats. However, when there were quite a few super ripe bananas sitting at home, instead of making banana bread, I wanted to give this one a go and my god, it tasted soooooooooooo good. I was instantly transported back to the Goldilocks story and quite convinced the porridge she had out of the baby bear’s bowl must have tasted something like this :). I have made it quite a few times since then and I absolutely love it. When I make it ahead, I store it in the fridge and heat it in microwave before having it. And oh, I just love the salted cashew and a splash of maple syrup for that salty and extra sweet quotient.. If you haven’t tried this before, you simply gotta try it. Ticks the taste, the health and the stomach super filling part :).

Ingredients
  • 2 over ripe bananas the small Indian variety
  • 1/3 cup steel cut oats
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 tsp cinnamon powder
  • 1 tsp maple syrup optional (for garnish)
  • 3 nos roasted cashews optional (for garnish)
Instructions
  1. Take a medium size broad pan (I used my stainless steel one).

  2. Place the 2 over ripe bananas in the pan and mash them using a fork.

  3. To this, add 1/3c oats, 1/2c milk, 1/2c water, 1/2t cinnamon powder.

  4. Mix well and switch on the stove and keep it on medium to low flame.

  5. Keep stirring the mixture for 5 minutes (till the oats is cooked) and the mixture becomes nice and creamy.

  6. Turn off the flame because the creamy oats is ready to eat. That easy to make it.

  7. Transfer to a bowl and top it off with 1t maple syrup, 3 roasted cashews (this part is really yumm trust me) and dig in hot!!

Recipe Notes
  1. You can use 1 over ripe large banana (the chiquita kinds) instead of 2 small Indian variety ones. 
  2. The riper the banana, the sweeter the oats will be. 
  3. You can also add 1T chia while making this. 
  4. I just add 1t maple syrup for that extra sweetness. The whole oats thanks to the overripe bananas are actually nice and sweet already. 
  5. It’s ridiculous just how thick and creamy this oats is and genuinely delicious. 
  6. You can make this ahead and store it in your refrigerator. Right before having it, pop it in the microwave for 1 min or till it gets nice and hot.
