Peanut salad

Salad number 3 of my salad post series. The other 2 are halloumi salad & orange pear salad. That wraps up the ‘salad series’ for now, hehe. However, I promise you.. I have a few more salads planned which will be fantabulous. Will share them as soon as I try them out (and they turn out well :)). Anywho, this is a very simple salad that I have eaten many times growing up. This kind of salad is sold a lot by street vendors back home. My mil makes them every now and then when me dad & her wanna have salads. It’s extremely simple to make, highly satiating, highly filling & highly nutritious.

On a personal front, weather is getting better which directly implies to my active levels :). I am trying to take Adya regularly to the nearby parks. He loves to go to the park to see the CCCCCAAA (Cat from the epiglottis), sand & the buses that are parked in a bus terminal nearby. Swings & slides seem to fascinate him only after all of the above :D.

Ingredients
  • 1/2 cup raw skinless peanuts
  • 1 no cucumber
  • 1 no onion
  • 1 no tomato
  • 1 no carrot
  • 1 no green chilli
  • a bunch coriander leaves
  • 1/2 no lemon juice squeeze
Instructions
  1. Soak the peanut in regular water for 2-3 hours. 

  2. After that, pressure cook the peanuts by adding 1 tsp salt for 3 whistles. Once the pressure is released, strain the water out.

  3. Place the boiled peanuts in a large bowl. 

  4. To this add, finely chopped cucumber, onion, tomato, carrot (shredded) , green chilli & coriander leaves. 

  5. Mix well. Check & adjust for salt. 

  6. You can add lemon juice at this stage & mix. 

  7. Serve immediately or you can refrigerate in an airtight container for up to 24 hours. 

Recipe Notes
  1. Instead of soaking the peanuts for 2-3 hours, you can directly pressure cook it for upto 6-7 whistles. However, it's always recommended to soak any of these pulses since it's known to have leave a less bloating effect on people who feel bloated when they have pulses. 
  2. Adding lemon juice adds a nice zing to it so by all means, use it if you have it. 
  3. Cucumbers, tomatoes have a tendency to water. So, if consuming later on, the salad will be a bit watery. Yummy none the less.

My mil had boiled the peanuts by the time I went home 🙂 and hence no pre pic :D. This is a large bowl of all the ingredients – boiled peanuts, cucumbers, tomatoes, carrots, onion, green chillies & coriander leaves.

Mix everything well. Check & adjust for salt. You can squeeze some lemon juice at this stage.

Serve immediately or you can refrigerate in an air tight container for upto 24 hours.
