Strawberry popsicles

Hola peeps. A tad bit confused seeing a set of body sprays above in a strawberry popsicle recipe??!! Let me assure you – I haven’t put this photo in here cos of it’s color :). Yesterday I had gone to the mall to pick up some stuff and there was a lovely sale at Bath & Body works. But ofcourse, just like any other sale – there were only a certain section on display that was on sale and not everything. None of my usual favorites were in that section unfortunately. However, what caught my eye was this plumeria & I instantly picked up multiple bottles of these. It brought me memories of my friend Raagini (who resides in the US with her author/ writer husband Avinash – sounds fancy eh?!). I met Raagini when I landed my first job right after college. We were a group of 100 odd new joiners who were sent to New York for a 3 month training. She was my room mate there. She was not the room mate I had signed up for but she was the best room mate ever (I have had my fair share of room mates having been in a hostel life for many years). Both of us were mad in our own ways but could absolutely absolutely get along! I don’t remember having had any fights with her those 3 months. She was the one who introduced me to B&B works and she was (and probably is) super super crazy about this fragrance. Since B&B works wasn’t in India at that time (2011), she bought 10-15 of these fragrances (I don’t think am exaggerating the number at all). So when I saw these yesterday (I have never seen them in Dubai in the last 6 years of my residence here), I just had to pick it up & I had to pick it up in her style – BULK! It’s a sheer coincidence to this post that the color of the fragrance is pink :). I had given the blueberry popsicles a go last week & based on the feedback from D, I had decided to blend both layers and use strawberry as the berry instead. I am yet to get feedback from D on this. Hope he likes this one even better than the blueberry popsicle! All these popsicles are super easy to make. I can’t seem to understand why I have waited for so long to try these! Since I am leaving to the UK in another week, wanted to stock up the fridge with strawberry related ice creams since D loves strawberry flavors :).

Strawberry popsicles

Servings: 4 popsicles
Ingredients
  • 1 cup hulled & halved strawberries
  • 1/4 cup cashew nuts (soaked overnight)
  • 1 tsp vanilla essence
  • 2 tbsp honey
  • 4 tbsp water
Instructions
  1. Blend all the ingredients mentioned above. 

  2. Add more honey if the strawberries aren't sweet enough and more water if the mixture is very thick.

  3. Pour the mixture into moulds & freeze it for 8-10 hours (best left overnight).

  4. Run each mould under tap water or dip each mould in warm water for 10-15 seconds and then gently shake the popsicle off the mould. 

Recipe Notes

You can add sugar instead of honey. If doing so, you could macerate the strawberries a little ahead of time as it releases the sweetness in the strawberries.

In a bowl add strawberries, soaked cashew nuts, vanilla essence & honey

Add a little water & blend it all into a smooth mixture.

Freeze for 8-10 hours! Dip in the moulds for a few seconds in warm water and pull out the popsicles!

    Though I am reading all the posts of Sowmptuous, this is the first recipe I have tried on :). I did not have strawberries at home so replaced them with blue berries. Easy to make and yummyyyy !!!(Kids feedback). little ones and their dad finished off all the popsicles even before i could taste.
