Chocolate mug cake (Eggless)

This was my first post on my very own site (Yes yes, baby steps towards my dream). However, due to my own stupidity while trying to juggle around with different plugins and stuff for the site, I accidentally deleted this recipe. Thankfully, none of the images got deleted (Imported photos & captioning them is the most tedious task for me). So I realized, with a bit of rework I’d be able to get the recipe back on track. When I started writing on my blog, my first recipe was to do with chocolates due to my obvious love for chocolates (especially the dark ones) and it just naturally happened that the first recipe on my site was also to do with chocolates. This idea was triggered by my friend Akhila who tried to make a chocolate mug cake and she said it came out disastrous though she followed a recipe online to the bits & she had to dump it. She asked me to try it out and give her a recipe she can follow. I am so glad I have friends like her in my life who are constantly there to encourage and support me! Anywho, below is tried and tested recipe for chocolate mug cake. I tried it a few times before getting the recipe right. I followed this recipe and I swapped ingredients to make it healthier. Nonetheless, the base recipe is a keeper as well and am adding the details of that as well in my notes. I had friends try out the healthier version & the other – they opted for the healthier one without knowing it was healthier. Such a win that is for me I say :). Ingredients
Dry Ingredients
  • 4 tsp white whole wheat flour/ all purpose flour/ refined flour
  • 2 tsp unsweetened cocoa powder
  • 1 pinch baking soda
  • 1 pinch salt
Wet Ingredients
  • 3 tsp honey Refer to notes for alternate options
  • 1.5 tsp water
  • 2 tsp olive oil
Optional
  • 1 tsp crushed walnuts/ semi sweet chocolate chips
Instructions
  1. Mix all the dry ingredients in a mug/ ramekin.

  2. Mix the wet ingredients and whisk till there are no lumps.

  3. Add the walnuts/ chocolate chips at this stage.

  4. Microwave for 45 seconds and check.

  5. If you see a visible wet layer on top, keep it for another 10 seconds and repeat till you don't see any wetness on top.

  6. Let the cake cool down for a few mins before you dig in! 

Recipe Notes
  1. You can use 4 tsp of refined sugar (instead of honey) & an additional 1.5 tsp water.
  2. Each microwave setting is different. So start by keeping the mug cake in for 45 seconds and keep increasing by a few seconds each time if you think the cake isn't done.
  3. The cake will be very soft initially. It's very easy to overcook the cake which will make the cake very hard and inedible.
  4. You can use whole wheat flour for this recipe.
