Granola

My cousin Madhu makes these awesome granola and I always asked her to make some for me. Somehow thought making granola by myself was going to be difficult though she always told me this was a super cool fail proof recipe that she had mastered. Mastered to the extent, you wake her up in her sleep and ask for this recipe, she would be able to tell you the details to the bits am sure.

I finally did take a go at the recipe (thanks to the cockroaches in my cousin’s house :)) since she couldn’t use her oven. Just like she said, it was indeed uber simple to make and I am happy I can save a few weeks of breakfast effort for my mil.
Hers is an adaptation from here and I used to follow her instructions to the T. Now I have just simplified it to ingredients that are usually available in my kitchen and have also mentioned notes which should help you to adapt this recipe to things available in your kitchen :). Try it out and let me know. And ooh, these kutti/ small jars you see were the ones I packed to give as gifts to a few friends :).

Ingredients
Dry ingredients
  • 2 cups rolled oats I like to use the jumbo oats
  • 1/2 cup almonds/ walnuts Any nut mix works.
  • 1/2 cup pumpkin/ sunflower seeds Any seed mix works
  • 1 tbsp flax seeds If you don't have this, add a tbsp extra of any nut/ seed you have.
  • 1 tbsp chia seeds If you don't have this, add a tbsp extra of any nut/ seed you have.
  • 1/2 cup dry fruits I used a mix of raisins & dried cranberries
  • 3/4 tsp cinnamon powder
Wet Ingredients
  • 1/4 cup melted virgin coconut oil
  • 1/4 cup maple syrup/ date syrup I did a mix of a maple & date syrup
  • 1 tsp vanilla essence
Instructions
  1. In a wide bowl, add all the dry ingredients (except the dry fruits).

  2. To the mixture, add all the wet ingredients.

  3. Roll out a parchment paper/ silpat on a baking tray and spread the mixture on it and bake at 180c for 25-30 mins taking out the mixture in between and tossing it.

  4. Add the dry fruits (raisins/ dried cranberries) to the mixture after you take it out of the oven and mix it all up.

  5. Let the granola cool down. It gets crispy during this cool down phase.

  6. Store the mixture in an air tight container and serve it with milk or yogurt. It's divine either ways.

Recipe Notes
  1. You can totally play around with the nuts/ seeds based on your preference/ availability at home. When I make this for Adyant’s school, I completely omit the nuts & only put seeds. 
  2. Keep an eye on the oven after 25 minutes of baking so as to ensure you don’t burn the granola. 
  3. I have started using the top rack (the second from top actually) for breads/ buns & now this granola as well since the golden brown colour is just fantastic (hot air blows on top and helps browning physics logic). 
  4. You can have this as is as a snack or as brekkie by mixing with yogurt/ milk. 
  5. I recently used 1 1/4c jumbo oats & 3/4c quinoa and it worked out just fine. The quinoa was so crunchy and yummy.
