Microwave pita chips

hola peeps. This has probably been the longest break I have taken from blogging I think. I have totally missed it and been trying to make sometime to sit with my laptop and start typing. However, nothing has been working to my favour in terms of blogging :). Work has been mega crazy (I rarely say this but it’s true for now) and I am hoping this is just a phase and that things settle down at work. Home front has always been hard ever since Adya became a year old since he loves to take charge of the laptop that I use. I have tried multiple ways to distract him including giving him another working adult laptop but nothing seems to please him as much as getting the laptop that I wanna work on :). Anywho, here I am.. typing away happily after soooooo long. I am doing this sitting on my couch with adya on the couch handle while he’s watching his ‘wheels on the bus’ video on TV. Not sure if I have mentioned that Adya never watched till he was 2. For the last few weeks, he has been interested in watching TV and he wants only the same video, no deviation what so ever. We have decided that 25-30 mins of TV everyday now isn’t a bad thing after all. Hopefully, this doesn’t increase drastically espeically on our lazy days :D. Anywho, about this post now – D always ends up getting loads of pita bread when he’s in the arabic food binge mode. He almost always gets the breads in excess cos he knows that even if he can’t finish it, i’ll make these chips with it which invariably gets over in the house since everyone likes it. However, I have been baking these chips almost always and the last few weeks I just decided to keep it simple & just microwaved it. It actually turned out even better than baking it in the oven cos the moisture gets sucked in the microwave there by making the end result chips really crispy. This works very well on the time front as well. Also, this is a great party pleaser without anyone realising what a simple dish this is to make. You bake these chips & serve it as is or with some salsa/ sauce/ dip on the side – yummm. Also, this is extremely simple to make which is always a bonus for me :).

Ingredients
  • 6 small pita pockets
  • 1 tsp red chilli powder
  • 1/2 tsp salt
  • 1/8 tsp asafodita
  • 1 tsp olive oil
Instructions
  1. Using a pair of scissors, cut the pita pockets into small triangles. You could also tear them into bite size pieces using just your hands.

  2. In a small bowl, mix together the red chilli powder, salt & asafodita. Keep it aside.

  3. Place them on a microwaveable plate, mix with olive oil & spread them evenly. Make sure not to overcrowd the plate. You could do these in batches if there are a lot of pita pockets.

  4. Microwave at high for 2 minutes and give it a quick mix & microwave yet again for another 2 minutes (Keep an eye on the chips after the 3rd minute and ensure not to burn them).

  5. As soon as you take it out of the microwave, mix the seasoning onto the hot chips & give it a quick shake/ mix. 

  6. Yummy indianized pita chips ready for TV time :). 

Recipe Notes
  1. The more dry the pita pockets are, the harder it will be to tear/ cut them up. It will also require less microwave time owing to the already less moisture content. 
  2. This seasoning is as per my liking since I love the indianized flavour of these pita chips. You can alternate with any seasoning as per your liking.
  3. If you are looking for a healthy snack, make sure to buy the whole wheat flour pita pockets. These are the maida/ all purpose flour ones - not typically healthy. 
  4. This is not just a great party snack but also bodes well as Adya's school time snack :). He loves these.

Cut up the pita pockets into small triangles using a pair of scissors.

In a small bowl, mix together red chilli flakes, salt & asafodita. Keep it aside.

Drizzle in some olive oil & give it a quick mix.

Spread it evenly on a microwaveable plate & microwave at high for 2 minutes.

I like how they start to slightly puff up :). This is right after 2 minutes where the chips are not fully cripsy yet. This stage also tastes good honestly :).

As soon as they are out of the microwave, mix with the seasoning & give it a quick shake/ mix.

Transfer them into a bowl to have it immediately or keep it in an air tight container for 2-3 weeks. This one stays long :).
