Blueberry (N)icecream

Hello peeps. This week I am going to be bombarding my site with a whole new set of recipes. I came across this concept of a Nicecream (didn’t realise it was called that until last week) while watching my favourite TV show – The Kitchen where one of the guests who had come on the show made chocolate mint icecream using Frozen bananas as the base. I was super interested in making the recipe and I clearly remember going to my TV’s catch up mode and noting down the recipe on my phone (I am yet to try that recipe out). Once I joined instagram (that’s where I learnt the term Nicecream – what a lovely name right!), I saw so many of these nicecream photos floating around. Clearly, it seems to be an in-thing right now! And why wouldn’t it be. The lady on the show clearly had told how one serving of it has a lot of fibre, potassium among other good stuff and no empty calories on the whole! Ice cream with NO empty calories??!!! You think I am kidding right? I am most definitely not. Then you’d think it can’t taste that good right? Again, you are wrong. It genuinely tastes good. And this you are hearing from someone who actually doesn’t like bananas. Nithya/ Hari/ Prak – Banana lovers that I am aware of in my life – added delight for you guys :). D isn’t too fond of bananas but even he liked it. He now wants to eat these in different flavours – especially strawberry flavour which is his favourite :). Just to add another point, all I used were super simple ingredients – frozen bananas (base), blueberries (the flavour that we’d want), honey/ maple syrup (in case the nicecream isn’t sweet enough already). Do make it and let me know how it turns out. In case you guys try different flavours, let me know that as well. Lastly, those of you who are coming to know of the concept of Nicecream for the first time via this post – you are truly welcome :).

Ingredients
  • 1/2 cup frozen bananas I used 2 small bananas.
  • 1/2 cup frozen blueberries
  • 1 tsp honey/ maple syrup optional
Instructions
  1. Blend the frozen bananas & blueberries. Do not add any water.
  2. Taste the nice cream and add honey/ maple syrup if you want the nice cream sweeter.
Recipe Notes
  1. The more ripe the bananas are the better. Mine had all gotten black on the skin and kinda mushy on the inside. They are sweet and perfect for a nice cream.
  2. I had cut the bananas into small chunks & stored both the fruits in a ziploc bag in the freezer.
  3. My FIL had gotten the bigger variety of blueberries which are usually sweeter & juicier.
  4. The amount of honey/ maple syrup will depend on your taste/ liking for sweetness & also on the level of sweetness of the fruits. Add more if you don't think 1 tsp is enough.
  5. It will be a bit hard to blend the frozen fruits initially. Just hang in there and blend.

Freeze for a few hours in the freezer and dig in :). As simple as that!

    I tried the banana & strawberry flavour couple of days back… added extra honey, I am a sweet person :)… and it came out very well (to my own surprise), finished it at one go, couldn’t keep it back in the freezer…

    Just waiting to surprise my wife & kids (with my so-called cooking skills), when they are back !!!
