Simple broccoli soup

Hola peeps. Adya got this stomach 2 weeks back and ever since he has been super duper fussy about eating. He practically eats plain rice (not even with ghee on top) for lunch and maybe half roti/ dosa for dinner. He has been refusing to eat fruits (completely ignores them) and pushes away most veggies too. This is an extremely sad and frustrating phase for us at home since we want him to start eating alright asap. Not to mention, the whole process has seen him lose weight (he wasn’t even a chubby kid to begin with). Anywho, in one of those desparate attempts to make him have veggies in some form, I made this simple and easy broccoli soup. I didn’t add any fancy bits to it, nothing. I remembered that in a restaurant once, Adya had refused to eat anything but a broccoli soup. So, I tried my luck and it kinda worked. Kinda because he had only half a bowl and not an entire bowl (his small bowl). Nevertheless, it was some veggie gone in that day and it was a happy us at home :). Well, sort of. Moms almost always are never satisified with how much their kids eat. My mom and MIL still fuss over me 😀 (I am gloating in case you can’t make out). So, here you go – the easy peasy goody broccoli soup that uses pantry items for the most part excepting the star ingredient of course :).

Ingredients
  • 1.5 cups broccoli florets
  • 1 medium onion (roughly chopped)
  • 2 pods garlic (roughly chopped)
  • 6-8 nos pepper corns
  • 1 inch cinnamon stick
  • 2 no cloves
  • 1 no bay leaf
  • 1 tsp refined oil
  • 1/4 cup milk optional
Instructions
  1. In a small pressure cooker, add some oil.

  2. Once it's heated, throw in the bay leaf, cloves, pepper corns & cinnamon. 

  3. Once the dry spices start to release it's aroma/ flavours, throw in the garlic and saute till it starts to brown.

  4. Add the onions at this stage and saute. 

  5. Once they are translucent (not brown), add the broccoli florets, some salt & mix well. 

  6. Add 2 cups of water & pressure cook for 4-5 whistles. 

  7. Once the pressure is released, open the cooker & let the mixture cool down.

  8. Using a hand blender, puree the whole mixture. Taste & adjust for salt. Also, adjust the thickness of the soup as per your preference.

  9. Add 1/4 cup milk & bring the mixture boil (optional step but makes the soup creamier).

  10. Serve the soup hot with some warm bread on the side or with croutons on top. My son just polishes it off plain. 

Recipe Notes
  1. If you don't have a hand blender, transfer the mixture to a grinder/ mixer and blend. 
  2. You can skip the step of adding milk & boiling. It still tastes good.

Once the onions become translucent (not brown), throw in the broccoli florets, some salt & mix well.

Add 2 cups of water and pressure cook for 4-5 whistles.

Once the pressure is released, open the cooker & let the mixture cool down a bit.

Using a hand blender, blend the mixture to form a smooth puree. Check & adjust for salt. Also adjust the thickness at this stage by adding more water if needed.

Add 1/4 cup milk & bring the soup to a boil.

Serve the hot soup with some croutons on top or some warm bread!
