Chocolate chia pudding
Hey peeps.. I haven’t posted a recipe in 2 weeks. I told myself I should post at least 1 recipe each week. However, last 2 weeks were crazy which also included me traveling to my bestie’s 30th b’day!! the bonus part (yes, there is a bonus to this extravaganza in itself :)) was I traveled alone – Yes, thats right.. no baby and no big baby :). The trip was awesome but I was super sleep deprived!! well, back to what this post is actually about – Chocolate chia pudding!! Chia is something I have been wanting to try for a while because of all the goodness it has including the omega 3 fatty acids and how it can be incorporated easily in salads and stuff. This dish has chia as the star, not a side ingredient. I saw it first on the show – The Kitchen on FoodNetwork and thought it is a must try. Then came across this recipe in raks kitchen as well. Here goes! This can be had as breakfast or as dessert for those craving something sweet and indulgent but will not leave you feeling guilty.
- 3 tbsp chia seeds
- 1 tbsp maple syrup/ honey
- 3/4 tbsp unsweetened cocoa powder
- 1/2 cup milk
- a pinch cinnamon powder optional
- 1 no small banana
- few blueberries
- few chopped almonds

In a wide bowl, add all the ingredients mentioned above and whisk till there are no visible lumps.

Pour the mixture into a jar/ container and refrigerate it for 6-8 hours (best left overnight).

Have it as is or garnish with nuts/ granola/ fruits – the choice is yours.
- Use as much sweetener as needed. You can sweeten it with some dates/ fruits. Bestest way to have the brekkie. But if you just want it as an indulgent dessert, then add more sweetener.
- Right before having it, I add a little cold milk since I like my chia a little runny.
- You can mix and match with any fruits/ dry fruits/ nuts of your choice.
This is an absolute favorite of both my kiddos. A healthy pudding and a guilt free indulgence.
