Peanut butter chia overnight oatmeal

I have over 6 recipes to post and this was the last recipe I tried amongst the other recipes. Yet, I had to work on getting this one posted first. There are multiple reasons for this – the primary one being there is chia in it :). the close second being peanut butter. God, peanut butter simply makes everything better I think. I somehow never bothered to try out peanut butter till my late 20s. Now I regret not having tried it earlier. the big plus of this recipe – it’s an absolutely awesome breakfast which can be made in less than 5 minutes with ZERO cooking time! Now, who doesn’t love such breakfast ideas tell me. And hey, the main ingredient is oats and thereby making the breakfast not just awesome but also healthy. Let me add, by the time you are done eating this, you are super full (super full to nibble on anything extra for the next few hours which I love cos I always look over for nibble options) and lastly for me, the taste of peanut butter lingers in my mouth for a while and I simbly (yes simbly :)) love it! Those of you who love oats, this is a dish to try out by default. Those of you who don’t, you should totally try it cos you wouldn’t even realise you are eating oats. I have a friend who dislikes oats and was super surprised to know that granola has oats as the main ingredient and he super liked it. He always thought of oats as boring food. He had a bit of my breakfast this morning and had no clue it had oats in it :). For those of you who don’t like peanut butter (losers in my opinion honestly) can skip the ingredient and make use of the rest. It still tastes good. So peeps, give this dish a try and let me know how it turns out. I added some bananas, strawberries & cinnamon powder for the added goodness and gawd, the bananas, cinnamon, oats – they are just match made in HEAVEN!!! And btw, I followed this recipe.

Peanut butter chia overnight oatmeal

Ingredients
Main ingredients
  • 1/3 cup rolled oats
  • 1/3 cup regular milk
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1.5 tbsp creamy/ crunchy peanut butter
Garnishing
  • few pieces bananas/ any berries/ dates/ nuts/ pumpkin or sunflower seeds
  • 1 pinch cinnamon powder
Instructions
  1. In a bowl/ jar, stir in the oats and milk.

  2. To this, add the chia seeds, honey & peanut butter and give it a whisk.

  3. Close the bowl/ jar and refrigerate overnight or atleast for 6-8 hours.

  4. Enjoy the oatmeal as is or garnish with any (or more) of your favourite toppings and dig in!

Recipe Notes

1.You can have the oatmeal cold or you can heat it a bit in the microwave. Since I have a half hour drive to work, I use that time for the cool down before I dig in.

2. You can absolutely avoid the peanut butter/ chia seeds if you don't have them or like them.

3. You can substitute honey for any other sweetener. 

4. You can substitute regular cow's milk with almond milk/ soy milk if you are a vegan or allergic to cow's milk.

5. My cousin Nithya tried this. She prefers to add 2 tbsp extra milk to this recipe since she likes her oats runny. I like mine gloopy!

    I have oats kept at work as emergency breakfast in case I don’t have time to cook eggs in the morn. But this looks awesome and is literally no effort so will try it out and come back with my feedback ?
