Cheesy garlic bread

Hola, as promised this week – more recipes people :). Mohan, one of our family friends likes Italian food & his wife Divya isn’t the very comfortable yet with trying out Italian dishes! She is otherwise an awesome cook btw :). So, I have been wanting to invite them home for a while now for lunch/ dinner to treat (I am sure D will read this as torture) them to my version of Italian food! This weekend they had come over and I had decided on making multiple dishes (including soup) and in the end realised I was being over ambitious and stuck to making 3 dishes – Garlic Bread, Veg Bake & Coriander pesto pasta. The pasta is something I have tried quite a few times now and I am very comfortable making it. But for the other two, I was quite literally going to experiment on them (I need to figure out how to insert a devil smiley now). I was browsing recipes online and came across Hebbar’s kitchen version of the dish and decided to go with it. Seemed simple and easy to follow! However, ever since I learnt that for making a pizza base I don’t need to use Yeast and instead can make a yummy base with just flour, curd, baking soda & salt, I have so far not gone back to the yeast days. NO RESTING time as well as mentioned in my previous post. Such a plus for me! I don’t need to plan ahead for this :). I might one day use yeast in a recipe I have perfected with the curd just to see the taste/ texture difference but that is about it in all likelihood. So yeah, that’s the main difference from Hebbar’s recipe. Rest I followed the instructions laid out in the recipe. It definitely came out well and everyone loved it including Adya (the left 2 pieces in the pic above were his – the NO chilli flake pieces :)). However, I have a few points noted in my mind (I am going to add it to the notes below too) for next time when I try.

Ingredients
For the bread dough
  • 1 cup white whole wheat flour/ all purpose flour
  • 1/2 cup curd
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 3 pods garlic finely diced
  • 3/4 tsp oregano/ any dried italian seasoning
For the garlic butter
  • 1/4 cup butter melted
  • 3 pods garlic finely diced
Other ingredients
  • 1/2 cup mozzarella cheese/ any cheese of your choice
  • 2 tsp red chilli flakes
  • 1 tsp garlic & herb seasoning/ oregano/ any dried italian seasoning I love the garlic & herb seasoning that I have
Instructions
For the garlic butter
  1. In a small bowl mix in the melted butter & garlic and set it aside
For the bread dough
  1. In a wide bowl, mix together the flour, baking soda, salt, garlic & italian seasoning.
  2. Add the curd now and start kneading the dough into a smooth & pliable one. If the dough appears sticky, just add in a bit more flour & vice-versa.
  3. Once the dough is ready, dust some flour on a flat surface (I use a cutting board) and roll out the dough using your hand or a rolling pin to a desired size. Mine is somewhere around 8 inches.
  4. Spread half the garlic butter on the dough now.
  5. Add the lavish amount of cheese on one side of the dough.
  6. Fold the dough onto one side & seal the edges.
  7. Spread the remaining amount of garlic butter and sprinkle the chilli flakes & italian seasoning on top.
  8. Bake in a pre heated oven at 180c for 15 mins.
  9. Slice the garlic bread into pieces and serve hot!
Recipe Notes
  1. I want to try and use the grill option in my oven to see if I can achieving a better colour. I wasn't too happy with the color of the garlic bread.
  2. I also want to look up to see if there is any other way to make the base taste different from a pizza base. This one clearly gives you the taste of a pizza base where as the pizza hut recipes taste different - they are more towards a bread.
