My mom’s chocolate burfi
This is going to be my first post for 2018 :). Happy new year peeps! Happy for how the year 2017 panned out in terms of my blog. I feel very contented (and ambitious at the same time) for how things have shaped up so far. I want to focus more on my health as well in 2018. I want to get fitter and stronger for sure. Anywho, my mom left right before the new year (unfortunate for us) but not before showing me how to make this awesome chocolate burfi of hers. I have grown up eating this (quite literally). I think my mom learnt this from someone when I was in Grade 5 or something. Ever since, for any occasion (for any non occasion), we’d surely have this chocolate burfi at home. We love it. My friends love it. Our extended family loves this. Now D & even Adya like it. I am happy I got to document this. Even better, my mom gave me these small tips & tricks which I hope is going to be useful when I make it another time (hopefully tonight). When my mom showed me how to make this, I realised what an effortless cook she is. She doesn’t use any measuring spoon/ cup for this. Everything is eye ball measurement. Infact, she found it difficult to tell me the measurements. I was so insistent on those that she somehow found a way to give it as well not hinder her free flow process of cooking. I take credits for slicing up the chocolates. It was always my dad’s job to do this. Mom was never good at that part alone (no patience basically for that part). So my mom was quite pleased to see I cut up the chocolates pretty neatly and consistently :). What can I say – I seem to be a good mix of my dad and mom :). Anywho, this one is super super simple and a must try.
- 60 gms butter
- 90-100 gms refined sugar
- 3/4 cup water
- 100 gms milk powder
- 3 tbsp unsweetened cocoa powder

Heat a wide pan with the butter added in.

Once the butter is melted, add the sugar and the water.

Let the whole mixture boil & bubble up.

After 10 minutes of boiling (stir from time to time), take a small bowl with water & pour a few drops of the sugar mixture into it.

If there is a wax like deposit in the bottom of the bowl, the mixture is ready for the next step. If not, repeat this test after a few minutes.

Once the mixture is ready for the next step, throw in the cocoa & milk powder. Stir well.

Once the whole mixture has come together, turn off the heat.

Spread this mixture onto a greased plate and spread it out using a spatula or the backside of a small even surfaced bowl.

After 5 minutes, make slices on the chocolate mixture using a sharp knife.

Let the whole mixture cool down before you turn the plate and gently pat the pieces out.

Store in an air tight container and enjoy this wonderful & absolutely delightful chocolate. Lasts for a week when kept in an air tight container. In our house, this doesn't usually last more than 2 days.
- My mom prefers using a big non stick pan for this.
- She says the sugar mixture consistency is the key to getting the whole thing right.
- In case after adding the cocoa & milk, the consistency doesn't come out right (is still watery and not hardening), you can let the mixture cook in sim for 5-10 minutes for the mixture to harden. Make sure not to burn the mixture.
- Once you have added in the cocoa & milk powder and find that there is excess butter then just scoop out just the combined mixture using a spatula onto a greased plate (the excess butter will remain in the pan which you can later on use on pancakes or even dosa).
