Berry-Nutty popsicle

Hey peeps. Am super super excited about this post! I joined Instagram recently and started following Sharadha Ramakrishnan (a junior from college). Have been following her for a while on FB & knew she’s good at photography. Once I went on Instagram, looked her up and let me tell you – her photos are awesome! I see her food photographs and wanna make them :). I know for a fact that I am no where close to her in terms of photography and may very well never be. But, it doesn’t matter! I shall do what I can and my food in the end shall be yummy for sure :). I came across a strawberry-blueberry/ cashewnut-peanut butter popsicle in her array of photos (Insta link here) and knew I had to try this one. For starters, it seemed very simple and didn’t require a whole lot of ingredients & second most important reason – D loves these berry kinda popsicles. My secret added bonus for him – it has cashew nuts in it :). I did mention in my previous posts about how we are all striving to get D to gain weight & me lose weight. At this point, either isn’t looking very fruitful! Anywho, read on and for sure, for sure try this one! All you need is any kind of berry, any kind of nut, some sort of sweetener (sugar is good if none else) and some sort of mould. I have a super lame set of moulds that we purchased many years back from somewhere which is mostly used by Adya for playing. But hey, am going to quote one of D’s favorite quotes here – ‘உள் பாவாடைக்கு என்ன டிசைன்’. Might I point out one last thing – this is filling & very healthy. I would’ve swapped almonds for cashew nuts if I were making it for me!

Berry-Nutty Popsicle

Ingredients
For the berry layer
  • 1/2 cup blueberries
  • 1/2 cup plum
  • 1 tsp honey
For the nutty layer
  • 1 tbsp peanut butter
  • 1/4 cup soaked cashew nuts
  • 1 tsp vanilla essence
  • 1 tbsp maple syrup/honey
  • 3 tbsp water
Instructions
  1. Blend the ingredients in the 'For the berry layer' section.
  2. Pour the mix into 4 moulds unto 60% in each mould.
  3. Freeze the moulds for half hour. Do not insert the stick layer just as yet.
  4. Blend the ingredients in the 'For the nutty layer' section.
  5. Take out the moulds & fill on top of the berry layer and insert the stick and close the mould.
  6. Freeze for 6-8 hours.
  7. Right before serving, stick the moulds in warm water for a few seconds so that you'll be able to take out the popsicles easily.
  8. Enjoy the berry & nutty awesomeness!
Recipe Notes
  1. If you think you need any of your layers sweeter, then feel free to add more maple syrup/ honey.
  2. You can use any berry & any nut for this popsicle.
  3. Based on the feedback I got from D, am going to mix both the layers and try. will keep you posted!
