Broccoli fried rice

This dish is best compared with ABCD (American born confused Desi) since it kinda feels like this dish is an Indian born confused Italian with additional confusions with some indo-chinese elements added :D. No clue what I am saying? Please go to the recipe and check it out. This dish is an almost ditto replica of what I saw my co-sister made over the weekend. It was sooooo good I had to blog it but I found it so amazing that she used multiple cuisine flavours all in one dish and the result was just mouth watering. She started off the dish with out good old Jeera/ cumin tadka (Indian) along with ginger/ garlic (Indo-Chinese) and proceeded onto adding Mixed Italian herbs for seasoning (Italian) with some pepper (Indo-Chinese):D. Well, to sum it up.. it’s a truly global dish and a mega keeper recipe:D.

On a personal level news, Adya is into mokka comedy (dry comedy) and I couldn’t be happier. My dad was the king of mokka comedy and to see Adyant enjoy it and understand my mokka comedy just feels surreal and yet another nice way to remind and remember appa :). Adya, thanks to D is watching a lot of sports. Naturally, they were watching Tennis till last week since French Open was on. Adya likes Djokovic and Nadal, was rooting for Djoko. So one random day, I saw this guy ‘Tsitsipas’ (T silent) play and I just asked Adya if he knew what the opposite of the name was and told him it’s ‘Standsipas’. He actually got the joke and loved it and went around telling the same lame joke to everyone in the house and we even sent voice notes of that to my extended family :D. Next was Djokovic’s opposite Djoko-muggle (Tash, if you are reading this I know you’ll be very proud of me :)). Anywho, what melted my heart more than him enjoying my mokka comedy is that he knows my love for mokka comedy comes from my dad to this kinda comedy (he calls him tutudu thatha since I told him about my dad’s 2 + 2 = tutudu mokka joke which he loves). Since he’s never met my dad it’s very hard to find ways to sneak in my dad into him. These subtle but strong ways will hopefully help :D.

Also, in case you didn’t find any of the jokes above funny, then you and I cannot be friends :D. Now go make off some Broccoli fried rice either ways.

Course: Main Course
Cuisine: International
Servings: 2 persons
Ingredients
  • 1/2 cup basmati rice
  • 1/2 tbsp ghee/ vegetable oil
  • 1/2 tsp cumin seeds/ jeera
  • 1 medium onion
  • 1.5 tsp ginger garlic paste
  • 2 cups chopped broccoli
  • 1.5 tsp dried italian seasoning
  • 1 tsp freshly ground black pepper powder
  • 1/2 tbsp butter optional
  • 3 tbsp chopped spring onions optional
Instructions
  1. Wash the basmati rice well and cook it using the open pot method adding 1/2t salt.

  2. Once the rice is cooked (do not overcook), drain the excess water.

  3. Transfer the rice to a plate, spread it out and let it cool.

  4. While the rice is cooking, get going on the veggies.

  5. Wash broccoli florets and chop them into small pieces. Chop the onion finely. Chop the spring onions. Set the greens aside and add the white to the regular onion.

  6. In a medium sized kadai/ skillet, heat 1/2T ghee/ vegetable oil. I kept the flame on high.

  7. Once hot, add 1/2t cumin seeds/ jeera.

  8. When it starts to splutter, add the diced onion.

  9. Saute till it starts to change colour.

  10. Now add the ginger garlic paste. Saute till the raw smell goes/ till the onions brown.

  11. Now add the chopped broccoli, a little salt.

  12. Lower the flame and close with a lid for 5 minutes, stirring once or twice in between.

  13. Open the lid after 5 minutes, add 1.5 dried italian herb seasoning, 1t freshly ground black pepper.

  14. Saute for another 2 minutes (just for any excess water to evaporate).

  15. The broccoli will be cooked in 5-7 minutes (you don't want the broccoli to become mushy at the same time you don't want it under done).

  16. Now add the cooked basmati rice, 1/2T butter and mix everything well.

  17. Check and adjust for salt/ seasoning.

  18. Finally top/ garnish with spring onions (if using) and turn off the heat.

  19. Serve hot!
