Super simple & quick pizza

For those of you who know Tamil, I am in the ‘வெச்சா குடுமி சரைச்சா மொட்டை’ state. Have been trying out multiple new recipes and I must say – everything has been turning out quite well. That too, for a first attempt. My niece Tasha (you will see this name every now and then am sure) came home this weekend to spend sometime with us. When I got married and moved to Dubai, Tasha was a year old and she has been an integral part of my life ever since. I love her a lot & I love spending time with her. After having Adya, I haven’t been able to spend much time with her as before & whenever we meet, I always try and do something with her that she would enjoy. This weekend, thought will make pizza for her. I have made pizza a few times before and they have come out well but this time I came across a super simple way of making the dough (again, thanks to my fav show The Kitchen) and I wanted to try it. And man, it was extremely simple to make, the dough required no resting time, the pizza rose quite well & to me, the most important point – it requires items that will generally be available in your pantry!! No yeast, nothing. Tasha was my sous-chef yesterday and she was such a darling! We had a great time making this awesome & super easy pizza. Below are a few pics of our fun evening!

Ingredients
For the pizza base
  • 1 cup white whole wheat flour/ all purpose flour
  • 3/4 cup yoghurt
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 tsp garlic & herb seasoning
For the pizza
  • 1/4 cup pizza/ pasta sauce
  • 1/2 cup mozzarella cheese
  • 1/2 cup vegetables/ toppings of your choice
Instructions
  1. Pre-heat the oven on 200c.
  2. In a wide bowl, whisk together the flour, baking soda, salt, garlic & herb seasoning & yoghurt.
  3. Knead the mixture for a few mins till it's smooth. Add a bit of yoghurt if the dough is too stiff/thick.
  4. Using a rolling pin, rollout the pizza to a 6-8 inch wide base and prick some holes in it using a fork.
  5. Place the pizza on a baking tray coated with some oil & bake for 4-5 mins such that the base will be half-cooked.
  6. Take out the half-cooked base & spread the sauce evenly on it.
  7. Spread the mozzarella cheese, toppings of your choice (I used onion & baby carrots), sprinkle a bit of garlic & herb seasoning & salt.
  8. Bake for another 10-12 mins till the base turns golden brown.
  9. Cut the pizza with a pizza cutter/ knife & enjoy the yummy pizza.
